Let’s celebrate citrus and all the wonderful things it makes taste so good. Citrus is a key ingredient to making millions of wonderful and amazing dishes. We would be lost in the world of marinades without citrus, it breaks down protein and helps tenderize. Join us as we talk about citrus and all the amazing things it allows us to create. In class we will be talking about all the many different kinds of salad dressing and brines that can be made with the wonderful citrus. Menu: Citrus Marinated Ceviche, Orange Glazed Brussels Sprouts, Citrus Brined Chicken, Lemon Cake with Fresh Lemon Curd.
