Pastry chef’s sugar sculpture sweetens the pot for O.C. Fair visitors

 

Orange County Fair visitors with a sweet tooth can find a lot to satisfy it on any given day. But most confections on the midway don’t require a blow torch to create.

On Sunday evening, however, award-winning pastry chef and master chocolatier Stephane Tréand wielded fire, canned air and plastic molds to forge an exotic tropical-looking sculpture out of sugar.

Chef Noah Blom and wife-partner Marin built on the success of Arc at The OC Mix with Restaurant Marin, a chic diner that also features wood-fired cooking. Grab breakfast, lunch, or dinner on the covered patio in a blue cushioned booth or grab a blue plastic table indoors, all set to French accordion music. Breakfast is as luxurious as you want to be, whether you prefer a basic bacon and egg sandwich or crab hash browns. Later in the day, they pile buttery lobster rolls with shrimp and serve a downright architectural chicken pot pie. Don’t leave without eating dessert, whether it’s supple donut holes served with whipped cream and quad-berry jam, or a towering slab of cake.

OC Register: Portola Coffee’s next phase: a remodeled flagship store and doughnuts

Six years after changing the way Orange County thinks of coffee, the flagship Portola Coffee Roasters in Costa Mesa has reopened its famed oval coffee bar after a seven-week remodel.

The redesigned coffee shop inside The OC Mix at South Coast Collection reopened late last week with a new ordering system designed to keep lines flowing while having baristas interact more closely with guests.
